What you’ll need: Large pot
1 lb ground turkey (white meat only - preferred)
1 can black beans
1 red bell pepper
1 large zucchini
½ package of sliced mushrooms
2 handfuls of fresh spinach
1 tsp salt (sea salt - preferred)
1 tsp freshly cracked black pepper
1 tsp chili powder
2 T olive or grapeseed oil
In the large pot add 2T of your preferred oil, wait until hot. Add zucchini, bell pepper and mushrooms, add salt and pepper. Saute for 5-7 min.
In the Large pan, cook your ground turkey, add salt & pepper.
Once the turkey is finished, add it into the pot with your veggies. Add 1tsp of chili powder, spinach and black beans (make sure you thoroughly rinse beans) give it one good toss, cover on low heat and let it simmer for 5 min. Add more salt or pepper if needed.
**Tip** add freshly sliced avocado and your choice of hot sauce on top, Enjoy!
